Bar Cookies: Oatmeal Diamonds

Ingredients: 
1 beaten egg
1/2 c sugar
1/2 c brown sugar
1 tsp vanilla or 1/2 tsp lemon
1/2 c sifted flour
1/2 tsp salt
1/2 tsp soda
1/2 tsp nutmeg
1/3 c shortening, melted
1 c quick cooking rolled oats
1/2 c walnuts, chopped

Directions:

  • Combine eggs, sugars and extract (vanilla) and beat well
  • sift together dry ingredients and gradually add dry ingredients to egg mixture, beating well
  • Stir in shortening, oatmeal, and nuts
  • Chill dough about 1 hour
  • Sprinkle 1/4-inch thick on a greased cookie sheet leaving 1 inch space around sheet
  • Bake 350 degrees until golden brown and flat in the center (about 15 minutes)
  • At once, cut in diamonds and remove from pan
  • Let it cool
  • Makes about 3 dozen
