2 eggs
1/3 cup sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
2 cups milk
2 1/2 cups dry bread cubes (about 5 slices of bread)
1 medium-sized red apple, sliced thin (1 cup)
In greased 1-quart baking dish mix eggs, sugar, cinnamon and salt.
Stir in milk
Add bread and apple
stir gently to combine
Let stand about 5 minutes for bread to absorb some liquid
Bake in preheated 350 degrees oven for 45 minutes (or until knife inserted halfway between center and edge comes out clean).
Let stand at least 15 minutes before serving.
(Makes 4 servings)

Lemon Mist
2 cups sugar
juice of 2 lemons (or Real Lemon)
1 teaspoon lemon or orange extract
1/2 pint regular cream (or condensed milk)

- Mix and let stand for a few minutes
- Add
1/2 pint regular cream (or condensed milk)
- Blend with beater and put in freezer. When partially frozen, whip and return to freezer.

Toffee Torte
1 angel food cake
1/2 pint whipping cream, whipped
4 Heath toffee candy bars
1 stick of butter (1/4 pound)
4 egg yolks
2 cups powdered sugar
1 teaspoon vanilla
1 pinch salt
1/2 pint whipping cream, whipped

- Beat egg yolks until light
- Add powdered sugar, salt and vanilla to softened butter
- Add sugar/salt/vanilla/butter mixture to the eggs
- Fold in stiffly beaten whipping cream
- Divide cake in half
- Use half of the frosting for filling
- Use the remainder to frost sides and top
- Chop candy bars and sprinkle on top and sides of cake

Crisp Cookie Torte
1 1/2 cups coarsely broken chocolate cookies
1 scant cup sugar
1/2 cup chopped walnut meats or pecans
3 egg whites (beaten)
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla
Combine cookies, sugar and nuts
Beat egg whites until stiff, add cream of tartar and vanilla
Fold in cookie mixture
Pour into a 9x9 greased pan
Bake in slow oven 325 degrees for about 1 hour
Cut while still warm
It can be served with ice cream and a chocolate sauce over each square
or just plain whipped cream
This recipe makes 9 servings

Apple Torte
Undercrust
1/2 cup butter or other shortening
5 Tablespoons sugar
2 whole eggs (beaten)
2 cups flour
1 teaspoon baking powder
Grease an oblong baking pan.
Press the mixture around the edges and bottom of pan (Don't bake it!)
Filling
5 large apples chopped fine
1/4 pound walnuts chopped fine
1/2 pint sour cream
3 egg yolks (well beaten)
Mix with 1/2 cup sugar
Pour filling over the crust filling. Bake in 350 degree oven for 45 minutes
Beat the 3 egg whites and add 3/4 cup sugar. Put this on top of the baked torte and brown in the oven.
Serve with a small portion of whipped cream or ice cream

Peach Cobbler

Kram (Swedish Pudding)
Makes 4 to 6 servings
2 T cornstarch or 4 T flour
2 T sugar
2 T water
2 C fruit juice, heated
Make paste of cornstarch, sugar and water. Slowly stir in hot fruit juice. Cook over low heat, stirring constantly, for 3 to 5 minutes, or until mixture is clear and thick.
Serve cold, with or without whipped cream.

Rice Pudding
1/2 c raw rice - cook it
4-5 eggs
vanilla
1/2 c sugar
1 c half-and-half
3 c milk
Mix together in casserole dish and put the dish in a pan of hot water. Bake at 350 degrees for 1 hour.
