Frugt Suppa (Fruit Soup)

Dec. 1966

1/2 pound prunes
1/4 pound dried apricots
1 cup seeded raisins
4 Tablespoons tapioca
1 cup sugar
1 stick cinnamon
2 cups dried apples
1 sliced lemon
1 sliced orange
1/4 cup maraschino cherries
1/4 teaspoon salt
2 quarts water

Soak dried fruits overnight.

Combine all ingredients except cherries in two quarts water and cook until fruit is soft.

Add cherries.

Serve either hot or cold.

Caramel Brownie

1/2 cup + 2 Tablespoons melted shortening
2 cups brown sugar
2 well-beaten eggs
2 teaspoons vanilla
1 cup sifted flour
2 teaspoons baking powder
1 teaspoon salt
1 cup chopped nuts

350 degrees
Bake 40 minutes

French Silk Pie

cream together:
1/2 cup butter
3/4 cup sugar

add:
1 teaspoon vanilla
1 1/2 square melted chocolate

add:
3 whole eggs

Beat 5 minutes with beater on high
add 1 whole egg and beat another 5 minutes

Pour into baked pie shell and chill
Serve with whipped cream

Sophie's Cookies

1 cup shortening
1/2 cup brown sugar
1/2 cup white sugar
1 egg
2 cups flour (1/4 cup more)
salt
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon vanilla

Chill 1 hour and roll into balls and put into sugar and press down with a fork.
Put halved walnuts on top or ground nuts

Brown Sugar Frosting

2 cups brown sugar
6 Tablespoons cream
1/4 cup butter

Combine and boil 1 minute. Let cool and add:
1 teaspoon vanilla

and beat until ready to spread

(You can add a little powdered sugar (sifted) if it does not seem to get thick enough)

Easy Apple-Bread Pudding

2 eggs
1/3 cup sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
2 cups milk
2 1/2 cups dry bread cubes (about 5 slices of bread)
1 medium-sized red apple, sliced thin (1 cup)

In greased 1-quart baking dish mix eggs, sugar, cinnamon and salt.
Stir in milk
Add bread and apple
stir gently to combine
Let stand about 5 minutes for bread to absorb some liquid
Bake in preheated 350 degrees oven for 45 minutes (or until knife inserted halfway between center and edge comes out clean).
Let stand at least 15 minutes before serving.
(Makes 4 servings)

Blueberry Cake

1/2 cup butter
1 cup sugar
(cream butter and sugar together)
Add
2 eggs, well-beaten
1/2 cup light cream
1/4 tsp nutmeg
2 cups flour, sifted
2 tsp baking powder
pinch salt
Mix all above ingredients together

1 1/4 cups blueberries dusted with 2 Tablespoons flour

Fold into cake mixture very gently

Pour into an 8x12 inch pan. Dust the top with 1/4 cup sugar and a little nutmeg

Bake 25 minutes at 350 degrees

Overnight Ginger Cookies

1 cup brown sugar
1 cup white sugar
1 cup shortening
2 well-beaten eggs
1/2 cup molasses
1 teaspoon soda dissolved in a little hot water (1-2 Tablespoons)
1/8 teaspoon salt
1 teaspoon ginger
4 1/2 cups flour

Mix together. Blend well.
Form into loaves and let stand overnight in refrigerator.
Slice 1/4-inch thick slices.
Bake 350 degrees for 15 minutes.

1 can tuna
1 can mushroom soup
1 can peas
Heat above and pour 1 package of in chow mien noodles. Mix and serve

Baked Frosted Squares

Cream together 1 cup brown sugar and 1/2 cup butter
Add 1 egg and 1 egg yolk (save the egg white from this egg for the topping) and 1 teaspoon vanilla
Beat hard
Add 2 cups flour, 1 teaspoon baking powder, and 1/4 teaspoon salt
Mix well
Stir in 1 cup chopped nuts
Spread in greased 9"x15" pan

Now beat egg white until stiff, but not dry
Add 1 Cup brown sugar and 1 teaspoon vanilla and beat thoroughly
Stir in 1/2 cup chopped nuts.
Spread over top of dough

Bake in preheated oven moderately hot 350 degrees for 30 minutes
Cool in pan for a few minutes before turning out on racks
Cut in bars
Makes about 25-30 bars

Pineapple Cranberry Punch

A blend of fruit juices and ginger ale creates a colorful party punch.

[very good]

1 can (46 oz.) Dole Pineapple Juice
1 bottle (32 oz.) cranberry juice
1 bottle (32 oz.) ginger ale
1 can (6 oz.) frozen orange juice concentrate, thawed
Ice cubes
Orange slices, strawberry halves or mint sprigs

Combine all ingredients in a punch bowl.
Add ice.
Garnish with orange slices, strawberries or mint, as desired.

Makes about 3 1/2 quarts.

Chocolate Halfway Cookies

1/2 cup plus 1 Tablespoon shortening
1/2 cup white sugar
1/2 cup brown sugar
2 eggs, separated
1 Tablespoon cold water
1 teaspoon vanilla
1 3/4 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 package (6 oz) chocolate chips
1 cup more brown sugar

Cream shortening and first two sugars
Add egg yolks, water and vanilla
Then add dry ingredients
Press into a 9x13 pan
Sprinkle with chocolate chips
Beat egg whites until stiff Add 1 cup brown sugar, beat into egg whites until stiff and pour over the chocolate chips

Bake at 375 degrees (350) for 25 minutes

Chili

combine in saucepan

1 pound ground beef
1 can tomatoes or 1 pound fresh tomatoes
1 can kidney beans
1/4 teaspoon pepper
2 Tablespoons chili powder
2 Tablespoons vinegar

Cover and bring to simmer and cook 20 minutes.

Swedish Cinnamon Coffee Cake

[made for G&P birthday coffee '72]

Place in this order in mixing bowl:
1 packet active dry yeast
2 cups Occident or King Midas flour
2 tablespoons sugar
1 teaspoon salt
3 eggs
1/4 cup butter (melted or soft)*
2/3 cup hot milk

Directions:
Beat at speed 3 for 3 minutes (Batter will climb beaters, just push down with rubber spatula). Spread in well-greased 13x9-inch pan.

Topping:
Combine 1/2 cup sugar, 2 Tablespoons butter, 1/4 cup chopped nuts, if desired, and 1 1/2 teaspoons cinnamon. Sprinkle over the batter. Cover. Let rise in warm place for 30 minutes, or until light.

Bake at 375 degrees for 20-25 minutes, or until golden brown. Frost warm, if desired, with vanilla frosting.

*Place butter in milke to melt when milk is heated.

No Fuss Corn Chowder

  • Cook 1/2 cup chopped onion in 2 Tablespoons butter (or oleo) until tender
  • Stir in 1 can cream of potato soup
  • 1 16-ounce can whole kernel corn undrained
  • and 1/4 cup milk
  • 1/4 cup water
  • 1 Tablespoon freeze dried chives
  • dash of pepper

Cook until hot. Makes about 4 cups.

Cheese Ball

2 8-ounce packages of cream cheese
1 small can drained crushed pineapple
2 Tablespoons minced onion
1 teaspoon seasoning salt
1/3 cup chopped green pepper
1 cup chopped nuts
  • use 1/2 cup nuts inside and roll in the other 1/2 cup (chill before rolling)

24 graham crackers, crushed
1 can sweetened evaporated milk
1 package chocolate chips
1 package coconut flakes

Put in a 9x9 pan and bake at 350 degrees for 25 minutes

3 c flour

Mix together
Drop on tin and flatten with a fork

Creamy Apple Squares

1 yellow cake mix
1/2 c butter, softened
1/4 c brown sugar
1/2 tsp cinnamon

Combine brown sugar and cinnamon together. Set aside 2/3 c of brown sugar/cinnamon mixture aside for later.

Combine and mix the rest of the brown sugar/winnathe above ingredients until crumbly
