My 95-year-old grandmother, Margaret Troolin Anderson Peterson, gave me her recipe boxes a few years ago. She ran the Bethel College (Minnesota) coffee shop for years and was a professional caterer. Bottom line: Grannie could really cook. I decided to post the recipes on the cards in this blog. A new recipe card will be entered daily. Enjoy!

Caramel Brownie
1/2 cup + 2 Tablespoons melted shortening
2 cups brown sugar
2 well-beaten eggs
2 teaspoons vanilla
1 cup sifted flour
2 teaspoons baking powder
1 teaspoon salt
1 cup chopped nuts
My wife and I grew up together and went to a small private school. There was a small staff of women who cooked lunches for the school, and some of the dishes were home-made. To this day many decades later, my wife and I still talk about how good the food was. One of the deserts the cooks made of which I absolutely loved was a "caramel brownie." My mother told me once she got the recipe from the cooks, and last year when cleaning out her attic, I found it. Unfortunately, it was scaled for a school (8 lbs sugar, 5.5 cups shortening, 1 gallon flour, etc). I tried scaling it down, but no luck. On a lark, I entered the ingredients into Google and stumbled upon this recipe. The school recipe doesn't scale to this one, but no matter. This recipe is it!! So glad to find something that brings back such great memories to my wife and I. Thanks!!
