Easy Coffee Cake
Cut Rhodes frozen bread loaves into 10 or 12 pieces (2 loaves or 24 rolls put in pieces in 9x13 inch pan or bundt pan greased
Mix:
1 cup brown sugar
1/2 cup soft butter
1 small package vanilla pudding, dry (regular)
1 Tablespoon vanilla
1 Tablespoon cinnamon
Sprinkle 3/4 of this on bottom of pan.
Lay pecans here and there and place slices of dough over that
Add remaining topping over the dough
set in refrigerator overnight before baking, if possible
if not, let stand at least 10 minutes
Bake 350 degrees for 25 minutes
Turn out on a cookie sheet
Mix:

1 teaspoon lemon juice
2 Tablespoons salad dressing
1 small onion
Mix the above together and spread on a nice pizza plate
Top with 1/2 bottle chili sauce
Add broken crab meat
Garnish with fresh or dried parsley
Serve with crackers such as Ritz, Triscuit or Hi Ho

Vegetable Beef Soup

"Vegetable soup allows for a great amount of creativity. Left-over vegetables can be added and new combinations tried to make the soup a little different each time it is made."
1/2 cup diced celery
1/2 cup diced onions
1/2 cup diced carrots
1/2 cup shredded cabbage
1/2 cup peas
1/2 cup lima beans
1/2 cup barley (optional)
3 quarts beef stock
Prepare vegetables and add to hot beef stock.
Cook until vegetables are tender.
Add barley (if desired) and cook until tender.
Leftover vegetables and beef can be added, heat through.
Season to taste.

Mix together with 1/2 can hot water:
1 can cream of celery soup
1 can cream of chicken soup (or cream of mushroom)
1 envelope of onion soup mix
Cut up chicken and lay on top and sprinkle 1/2 package of onion soup.
Cover with aluminum foil and seal good.
Bake at 325 degrees for 2 hours (don't look at it; keep it covered)

Meat-Rice Balls

1 1/2 pounds hamburger
1 egg
2 slices toasted bread crumbled fine
1 cup diced celery
1/2 cup uncooked rice
1 cup milk or more
1 small can tomato soup
1 can water
salt and pepper to taste
Mix together
Shape into meat balls
Pour tomato soup over all and bake about 2 hours in moderate oven
(Yield: 14 meat balls)

Mix 16 oz Velveeta cheese and 1 can (15 oz) chili
Microwave in a 2-quart microwavable container on high for 6-8 minutes or until the Velveeta is melted, stirring every 3 minutes.
Serve hot with tortilla chips or french bread chunks.
Makes 3 3/4 cups

2 Tablespoons prepared mustard (*hand-written note in different pen that says "4T")
1 can chicken gumbo soup
salt and pepper to taste
1/2 teaspoon soy sauce
Simmer all together for 20 minutes and stir, until well done. Place between buns.

Bake in preheated 350 degrees oven for 45 minutes (or until knife inserted halfway between center and edge comes out clean).
Let stand at least 15 minutes before serving.

1 lemon
2 packages frozen raspberries
1 package frozen cranberry-orange relish
Dissolve Jello in water. Add ginger ale or 7-Up, raspberries, relish and juice from lemon.
Pour into oiled mold and refrigerate.
Better if made night before.

Karmel Korn (Caramel Corn)
2 packages Old Dutch Korn Kurls
Boil 5 minutes:

1 cup margarine
1/2 cup white corn syrup
1/2 teaspoon cream of tartar

Brunch Cheese Casserole
Serves 6: 9-inch square pan (one recipe)
Serves 12: 9x13 pan (double recipe)
3 slices white bread
1/2 pound American or cheddar cheese, shredded (I use 1/2 sharp & 1/2 medium cheddar)
4 eggs
1 teaspoon salt
1 teaspoon dry mustard
2 cups milk
paprika
1/2 pound bacon (fry and crumble to put over top in last 15 minutes)
Butter pan well
Cut crusts from bread, cut into squares, put in bottom of pan
Sprinkle cheese on top
Beat eggs -- add salt, mustard and milk
Pour over bread and cheese
Sprinkle with paprika
Refrigerate at least 12 hours before baking
bake 1 hour, uncovered, at 325 degrees
Garnish with crumbled bacon last 15 minutes of baking

Green Tea Punch

juice from 2 dozen oranges
1 dozen lemons
(use frozen juice if you like)
5 quarts cold green tea (not too strong)
1 large can crushed pineapple
Sweeten to taste. Add a little red food coloring to make a delicate pink and some cherry juice and about 6 bottles ginger ale.

1/2 cup sugar

Work butter until creamy; beat in sugar and eggs, one at a time.

Lemon Mist
2 cups sugar

Toffee Torte
1 angel food cake
1/2 pint whipping cream, whipped
4 Heath toffee candy bars
1 stick of butter (1/4 pound)
4 egg yolks
2 cups powdered sugar
1 teaspoon vanilla

- Beat egg yolks until light
- Add powdered sugar, salt and vanilla to softened butter

- Divide cake in half
- Use half of the frosting for filling
- Use the remainder to frost sides and top
- Chop candy bars and sprinkle on top and sides of cake

Eggs on Toast
[October Special]
4 slices white bread
4 eggs
Butter
Salt and pepper
Parsley or endive
Cut hole in center of each slice of bread with a cookie cutter. Butter and toast one side of the bread.
Butter the second side; place in a fry pan pre-heated to 300 degrees.
Add egg to center hole of the bread.
Fry to desired doneness. Place on platter. Garnish with Endives or Parsley. Serve.

Poor Man's Crab Casserole
[Land O Lakes]
1-pound package frozen cod fillets (not breaded), thawed and drained
Crab Mixture
2/3 cup Sweet Cream Butter, melted
1 cup crushed herb seasoned stuffing mix
6-ounce package frozen crab meat, thawed and drained
4-ounce can mushroom stems and pieces, drained
1 egg
2 T chopped fresh parsley
1/4 teaspoon salt
2 T lemon juice
1/4 teaspoon hot pepper sauce
Topping
1/2 cup crushed herb stuffing mix
2 T butter, melted
Directions
Heat oven to 350 degrees
Place cod fillets in bottom of an ungreased 8-inch square baking dish.
In a bowl, mix crab mixture ingredients. Sprinkle crab mixture over cod fillets.
In same bowl combine all topping ingredients; sprinkle over crab mixture.

Add 1 egg and 1 egg yolk (save the egg white from this egg for the topping) and 1 teaspoon vanilla
Beat hard
Add 2 cups flour, 1 teaspoon baking powder, and 1/4 teaspoon salt
Mix well
Stir in 1 cup chopped nuts
Spread in greased 9"x15" pan
Now beat egg white until stiff, but not dry
Add 1 Cup brown sugar and 1 teaspoon vanilla and beat thoroughly
Stir in 1/2 cup chopped nuts.

Bake in preheated oven moderately hot 350 degrees for 30 minutes

1 bottle (32 oz.) cranberry juice
1 bottle (32 oz.) ginger ale
1 can (6 oz.) frozen orange juice concentrate, thawed
Ice cubes
Orange slices, strawberry halves or mint sprigs
Combine all ingredients in a punch bowl.
Add ice.
Garnish with orange slices, strawberries or mint, as desired.
Makes about 3 1/2 quarts.

Apple Torte
Undercrust
1/2 cup butter or other shortening
5 Tablespoons sugar
2 whole eggs (beaten)
2 cups flour
1 teaspoon baking powder
Grease an oblong baking pan.
Press the mixture around the edges and bottom of pan (Don't bake it!)
Filling
5 large apples chopped fine
1/4 pound walnuts chopped fine
1/2 pint sour cream
3 egg yolks (well beaten)
Mix with 1/2 cup sugar
Pour filling over the crust filling. Bake in 350 degree oven for 45 minutes
Beat the 3 egg whites and add 3/4 cup sugar. Put this on top of the baked torte and brown in the oven.
Serve with a small portion of whipped cream or ice cream

Mini Cheesecakes
Serves 36
3/4 cup sugar
2 8-ounce cream cheese
3 egg yolks
Beat 3 egg whites. Stuff and fold into above.
Butter muffin tins well. Coat with fine graham cracker crumbs.
Shake until sides are coated. Spoon mixture into tins. Fill to top.
Bake 15-20 minutes at 350 degrees
Remove and cool.
Mix 3/4 cup sour cream
2 1/2 teaspoons sugar
1 teaspoon vanilla
Top each muffin with 1 teaspoon of this. Then bake 5 minutes again. Let completely cool before removing.

Swedish Cinnamon Coffee Cake
[made for G&P birthday coffee '72]

1 packet active dry yeast
2 cups Occident or King Midas flour
2 tablespoons sugar
1 teaspoon salt
3 eggs
1/4 cup butter (melted or soft)*
2/3 cup hot milk
Directions:
Beat at speed 3 for 3 minutes (Batter will climb beaters, just push down with rubber spatula). Spread in well-greased 13x9-inch pan.
Topping:
Combine 1/2 cup sugar, 2 Tablespoons butter, 1/4 cup chopped nuts, if desired, and 1 1/2 teaspoons cinnamon. Sprinkle over the batter. Cover. Let rise in warm place for 30 minutes, or until light.
Bake at 375 degrees for 20-25 minutes, or until golden brown. Frost warm, if desired, with vanilla frosting.

Cherry Cream Pie

Bake a pie shell and cool it
Soften an 8-ounce package of Philadelphia cream cheese and when smooth add 1 tsp. vanilla and 1 cup powdered sugar. Then add a cup of whipped cream and blend it in.
Pour into pie shell and ad a can of ready prepared red cherries over the top. Be sure to use the thickened type canned cherries.

Kram (Swedish Pudding)
Makes 4 to 6 servings
2 T cornstarch or 4 T flour
2 T sugar
2 T water
2 C fruit juice, heated
Make paste of cornstarch, sugar and water. Slowly stir in hot fruit juice. Cook over low heat, stirring constantly, for 3 to 5 minutes, or until mixture is clear and thick.
Serve cold, with or without whipped cream.

Miriam's Grape Wedding Punch
7 cups grape juice
1 1/2 pints lime sherbet
1 1/2 pints soft vanilla ice cream
3 cups Ginger Ale
(sherbet and ice cream can be put in a blender)

No Fuss Corn Chowder
- Cook 1/2 cup chopped onion in 2 Tablespoons butter (or oleo) until tender
- Stir in 1 can cream of potato soup
- 1 16-ounce can whole kernel corn undrained
- and 1/4 cup milk
- 1/4 cup water
- 1 Tablespoon freeze dried chives
- dash of pepper
Cook until hot. Makes about 4 cups.

Creamy Apple Squares
1 yellow cake mix
1/2 c butter, softened
1/4 c brown sugar
1/2 tsp cinnamon
Combine brown sugar and cinnamon together. Set aside 2/3 c of brown sugar/cinnamon mixture aside for later.

- Vanilla wafers, crushed

- 1 pint of berries
- 1 envelope of gelatin

- Cream together butter and sugar.
- Add in beaten egg whites
- Spread butter, sugar, & egg white mixture over crushed vanilla wafers
- Put gelatin into juice and heated to soften
- Spread over the wafers/butter/sugar/egg mixture
- Spread whipped cream and nuts over all

Fresh Strawberry Pie

Quiche Lorraine
[Made for Mosier Dec. 2001]
Crust:
1 1/2 c sifted flour
1 1/2 c sugar
1 tsp salt
Filling:
4 eggs, slightly beaten
1 1/2 c milk
8 oz. sliced sharp cheddar cheese (Cracker Barrel brand preferred)
3/4 c diced ham or Spam

- Mix together and sift into a pie plate.
- Add 1/2 c cooking oil and 2 Tablespoons milk (whipped together first) and pat into the pie pan
Filling:

- Alternate layers of cheese and ham/Spam
- Pour milk and eggs on top of the entire layered portion

Basic Cookie Recipe
This recipe is used to make cookie cakes

Work in as for a pie:

- 4 c flour
- 1/2 pound butter
Beat:
- 4 egg yolks
- 1 c sugar
- after beating those together
- add 1/3 c sour cream (can use whip cream, too)
- 1/2 tsp soda
Next:
- Add flour to the butter mixture
- Refrigerate to bake the next day
- Roll out in a pan and bake 350 degrees for 10-12 minutes
Topping option:
- melt a bag of caramel chips with a little butter
- Stir until melted
- Cut with a crinkler into diamond shapes
- Put a spoon of caramel mixture over top top of each diamond and lay a pecan on top
or
- cut into squares and put a chocolate star or a mint in the center and turn up the corners

Tuna Casserole (or Turkey or Chicken)
1 can fried chow mein noodles
1 can cream of mushroom soup
1 can tuna
1/4 pounds of cashew nut pieces
1 c chopped celery
1/4 c chopped onions
1/2 c water
Directions:
1 can cream of mushroom soup

- Stew celery in water and cover for about 5 minutes
- drain off the water and add more water to make 1 cup
- add mushroom soup, mix well
- add celery, salt, tuna and half of the noodles and nuts

Coffee Bread
Ingredients:
2 c milk
1/2 c butter
1 c sugar
3 egg yolks, beaten (or 2 eggs whole, beaten)
10-12 whole cardamon
5-6 c flour
2 packages yeast
1 teaspoons salt
Directions:
Heat milk
Melt butter in milk
Stir in sugar and crushed cardamon
Let cool
Dissolve yeast in about 1/4 c lukewarm water
Add dissolved yeast to milk
Add the eggs and stir well
Add flour, just enough to form a soft, yet firm, ball of dough
Cover
Let rise in a warm place for about 1 1/2 hours
Place dough on floured board and shape into a ball
Cut in half if making loaves
Shape into a rectangle with a rolling pin
Spread soft butter and a sugar and cinnamon mixture over the dough
Roll up and place on greased cookie sheet
Cut with scissors. Start from outer edge to center and place dough to opposite side. Snip at about 2-inch widths.
Let rise for about 20-30 minutes
Brush with egg whites and sprinkle sugar and nuts on top (or leave it plain)
Bake at 375 degrees for 35-40 minutes
Frost while warm with powdered sugar glaze

Swedish Hardtack
2 envelopes of dry yeast
2 tsp sugar
1 c warm water
1/2 c shortening
1/2 c sugar
1 c scalded milk
2 eggs beaten
1 tsp salt
6 c flour
Directions:
2 tsp sugar
1 c warm water
1/2 c shortening
1/2 c sugar
1 c scalded milk

Directions:
- Mix together yeast, 2 tsp sugar and the warm water. Let stand for 10 minutes.
- (In a separate pot) melt shortening and 1/2 c sugar in scalded milk
- Let milk mixture cool
- Add salt and 2 c flour to the milk mixture
- Stir milk mixture and add the yeast mixture and the eggs while stirring
- Add the additional 4 c of flour (one at a time)
- Knead the dough and let rise for 1 hour
- Cut dough into 8 portions. Roll those portions out thin with a flatbread rolling pin
- Bake on a cookie sheet in a 400-degree oven for 3-4 minutes
- Turn with a spatula and bake until light brown
- Cool until crisp

8 Tablespoons prepared mustard
4 cans of chicken gumbo soup
Salt
Pepper
4 teaspoons soy sauce
Directions:
Simmer all together for 20 minutes and stir until well done. Place between buns.
Feeds 25.

2 c chopped ham or cut up in small cubes
6 slices bread
2 c shredded cheddar cheese
6 eggs
2 1/4 c milk
1 teaspoon dry mustard
Directions:

- Beat eggs in milk and dry mustard.
- Butter a 9"x13" glass baking dish. Place bread slices on the bottom of the greased pan.
- Spread ham over the bread and sprinkle with the cheddar cheese.
- Pour egg mixture over and sprinkle with more cheese.
- Cover with handiwrap and refrigerate overnight.
- Bake uncovered at 350 degrees for 50-55 minutes.

1 package yellow or white cake mix
1 package pudding (instant cream kind; strawberry cream is real good)
1 cup water
4 eggs unbeaten
Directions:
Beat together for 8 minutes. Bake for 350 degrees in an angel's food cake pan for 50 minutes.
* If you use lemon pudding, serve with lemon sauce.
* If you use chocolate pudding it makes German chocolate cake. Frost with German chocolate frosting.
Cool 25 minutes. Remove from pan and glaze.

Blend 1 c confectioner's sugar with either 2 Tablespoons milk or 2 Tablespoons lemon juices. Drizzle over cake.
Spice cake with butterscotch pudding.

Ham Loaf
Ingredients:
1 1/2 pounds ham, ground
1/2 pound pork, ground
2/3 c milk
1 c corn flakes, crushed
1 egg
1 pinch ground cloves
1/2 tsp Worcestershire sauce
1 tablespoon minced onion
2 pounds of sweet spuds
Directions:

- Bake on a shallow baking pan in a moderate oven (350 degrees) for 1 hour
- During the last 30 minutes of baking, boil sweet spuds in salted water until tender
- Drain, mash and season the potatoes
- Remove meat loaf from the over and frost with mashed sweet spuds
- Brush with melted butter and place under a broiler to brown
- Remove to platter
- Garnish with grilled halves of sliced pineapple and sweet pickles
- Makes 8 to 10 servings

Bar Cookies: Oatmeal Diamonds
Ingredients:
1 beaten egg
1/2 c sugar
1/2 c brown sugar
1 tsp vanilla or 1/2 tsp lemon
1/2 c sifted flour
1/2 tsp salt
1/2 tsp soda
1/2 tsp nutmeg
1/3 c shortening, melted
1 c quick cooking rolled oats
1/2 c walnuts, chopped
Directions:
1 beaten egg
1/2 c sugar
1/2 c brown sugar
1 tsp vanilla or 1/2 tsp lemon
1/2 c sifted flour
1/2 tsp salt
1/2 tsp soda
1/2 tsp nutmeg
1/3 c shortening, melted
1 c quick cooking rolled oats
1/2 c walnuts, chopped
Directions:
- Combine eggs, sugars and extract (vanilla) and beat well
- sift together dry ingredients and gradually add dry ingredients to egg mixture, beating well
- Stir in shortening, oatmeal, and nuts
- Chill dough about 1 hour
- Sprinkle 1/4-inch thick on a greased cookie sheet leaving 1 inch space around sheet
- Bake 350 degrees until golden brown and flat in the center (about 15 minutes)
- At once, cut in diamonds and remove from pan
- Let it cool
- Makes about 3 dozen

Next, spread hamburger or ground beef
On top of hamburger add a layer of baked beans (canned)
Then, add another layer of sliced potatoes
Pour a can of tomato juice over all
Bake at 350 degrees for 1.5 hours depending on size of casserole and how many layers you make

Chocolate Frosting
- Melt 1 5-ounce package of semisweet chocolate in a double boiler
- Stir in a pinch of salt and 1/2 c sour cream
- Blend until smooth and spread over an 8-inch cake (top and sides)

Ingredients:
1 c brown sugar
1/3 cup cocoa
2 c water
1 c chopped nuts
12 quartered marshmallows
1 package devil's food cake mix, white cake better
Directions:
- Arrange marshmallows and nuts in bottom of a greased 9"x13"baking pan.
- Combine sugar, cocoa, and water. Pour over nuts and marshmallows.
- Prepare cake mix and pour over mixture
- Bake 45-50 minutes
- 350 degrees
- Cut into squares. Serve warm or cold with whipped cream or ice cream.
